Berge Simonian was already running a small restaurant in Houston, Texas but he observed that an increasing number of his guests were requesting healthier fare, particularly fresh salads with freshly-made toppings and dressings. By October 2005, he opened the first Salata location with Tony, his brother-in-law, as his partner.  Over the years, the owners opened more Salata restaurants across Texas before branching out with more restaurants in other states.
