McDermott had the idea of opening a restaurant that could cater to a large variety of customers which would be difficult if he was to stick with just one kind of cuisine. To fulfill this he decided to go with a restaurant that offered everything possible, from classic steaks to Japanese sushi, Hawaiian ribeye and traditional Jambalaya. It has proven to be a massive success and there are now over 35 locations in the United States and even in Puerto Rico.
