The Jean Georges Steakhouse in Aria was opened in 2010.  Jean-Georges Vongerichten, the chef behind it, envisioned the restaurant as going over and beyond the traditional definition of an American steakhouse. The Shellfish Platter has lobster, king crab, oysters, clams, and Gulf shrimp, all of which have been prepared to perfection so every bite feels like a luxury.  The East and West Coast Crispy Sushi Sampler whets your appetite without making you feel too full – unless you don’t share it with your fellow diners.

The soup and salads aren’t your usual homemade dishes because these have been prepared, after all, by one the best chefs in the world. There’s a refreshing quality to the soups while the salads have the perfect balance of flavors and textures to them. The choices include Butternut Squash Soup, Iceberg Wedge, Blue Cheese & Crispy Bacon, Tomato Salad, Hearts of Palm & Coconut, Caesar Salad,   Parmesan, Lemon & Chili, and Beet & Frisee.

No fine dining restaurant will be complete without its own tasting menu and the Jean Georges Steakhouse has its world-class version.  The menu includes mouthwatering dishes like Osetra Caviar, Egg Toast & Herbs, Foie Gras Brulee, Spice-Crusted Wagyu Tenderloin, and Salted Caramel Sundae. There’s also a Tableside Carvery with Smoked Wagyu Brisket, Rack of American Lamb, and 42oz Wagyu Tomahawk, among others.

For the meat lovers, the meats are grilled over apricot wood and finished with sea salt, cracked pepper, and rendered beef fat for a juicy, succulent and tender dish.  Choices include prime filet mignon, New York strip, prime bone-in rib eye, prime porterhouse, and Tajima Wagyu filet.
