History

Guy Villavaso and Larry Foles opened the first Eddie V’s in Austin, Texas in 2000. By 2011, the chain was sold to Darden Restaurants, Inc. and, in the process, became a wholly-owned subsidiary of Darden’s Specialty Restaurant Group.

Your experience will be characterized by truly delicious steak and seafood dishes made from the best cuts and catch, as well as the best fresh oyster bar this side of the country. Your palate will definitely find its match in these dishes, especially when you have gourmet tastes.

As soon as you walk into an Eddie V’s restaurant, you will be greeted by friendly smiles – truly, a warm and welcoming attitude that makes the visit even more enjoyable. You may or may not make reservations but you and your group will likely be seated quickly, a good start to your dining experience.  If possible, you should make the reservations especially on weekends when the restaurants can be full of people lingering over their meals.

In many Eddie V’s restaurants, the dining areas are beautiful and spacious, especially the ones with upstairs and downstairs dining areas. There’s usually a bar area where men and women mingle over their specialty cocktails, wines and other alcoholic drinks. The wine racks are impressive, too, as well as being part of the attraction in the restaurants.

The romantic atmosphere partly comes from the sultry yet subtle earth tones complemented by bold artworks and wood finishes on the walls. The classy and upscale restaurants require dressy attire from its diners so these are great places to bring family and friends, as well as dates, who you want to impress with your impeccable taste in food.  The diners are mostly adults since the restaurants aren’t exactly kid-friendly; there are no kids’ meals here and the facilities aren’t designed for their use either.

There’s almost always live music, particularly from the jazz genre, in the restaurants. You and your group will find that the enjoyment of food becomes enhanced when relaxing music plays in the background. Yes, you can still carry normal conversations with each other – no need for shouting in each other’s ears – even with the live band.

The daily happy hour isn’t to be missed either. You can treat your family and friends to the reasonably-priced fresh seafood appetizers and signature cocktails.

The customer service here is among the best we have experienced so far, particularly in its niche. Just mention that one of your group is celebrating his or her birthday and a special treatment will be given. Your group’s table, for example, may be decorated with rose petals and the birthday celebrant will be provided with a card; small touches that speak about the restaurant’s thoughtfulness for its customers.

But you’re here for the food and drinks and these are so delicious that you may never think of steak and seafood dishes the same way again. The secret lies in the use of the best ingredients – fresh fish including yellow fin tuna and scallops delivered daily, as well as USDA Prime steaks hand cut and aged well for the best flavors.

Most of the dishes prepared in the kitchen are made from scratch so diners have the assurance of freshness in every bite, too. The dishes include lobster tacos; crab cakes with luscious Jumbo Lump crab meat; Hawaiian Yellowtail Sashimi with ponzu, red chilies, and cilantro; Filet Medallions Oscar Style with asparagus and Jumbo Lump crab; and Jumbo Gulf Shrimp.  The misoyaki butterfish has a melt in your mouth quality while the Chilean sea bass is so lovely.

And the generous portions of steaks are always cooked to perfection! Eddie V’s has perfected the technique of letting the steak shine on its own yet also enhancing its taste and texture with the right vegetables, sauces and side dishes.

Be sure to end your meal with the luscious desserts. We recommend the banana foster butter cake, a sweet treat that comes with a show – it will be flambéed right by your table.
