There are many ironies about California Tortilla that becomes more amusing when you come to think about it.  First, California isn’t usually associated with Mexican fare – Texas is typically the one, thus, the term Tex-Mex food. Second, the chain was neither founded nor based in California but in Maryland.

Nevertheless, California Tortilla is known for its Mexican-style fare. Known as CalTort, the chain of franchised restaurants offers fast casual dining services across several states including Maryland, Delaware, West Virginia, Florida, Virginia, New Jersey, and Pennsylvania, as well as in the District of Columbia, and in Qatar.  Some of the locations in airports are also known by another brand – Burrito Elito with a few tweaks in the menu.

Alan Cohen and Pam Felix opened the first California Tortilla restaurant in Bethesda, Maryland in August 1995. Since then, the chain has expanded to more than 50 restaurants in several states and abroad with more planned locations. The corporate headquarters are in Rockville, Maryland.
